Broccoli rice with gorgonzola

Broccoli / Gorgonzola / Eggs / Carrot / Raisin / Cashew nut / Olive oil / Salt / Black pepper

  1. Clean and wash the broccoli, then blend it
  2. When ready, put it in a microwave-safe container with its lid and add a spoon of water
  3. Cook in the microwave oven for 3 minutes at medium/high power
  4. Let it rest for 5 minutes in the closed container
  5. Cut two carrots in small pieces and start cooking them in a large pan with some olive oil
  6. Add the broccoli, salt and pepper, cook for 5 minutes
  7. Blend together two eggs and 100gr of gorgonzola and add them to the ingredients in the pan, cook for other 5 minutes
  8. Keep stirring and add raisins and crashed cashew nuts
  9. When the egg is completely cooked the dish is ready
