Blanched purple and green cabbage with toasted paprika cashews and sesame seeds

Cabbage / Parsley / Lemon zest / Sesame seeds / Cashews / Maldon salt / Sweet smoked paprika

Ingredients:

  • 300g white cabbage
  • 300g purple cabbage
  • 30g cashews
  • 1 bunch parsley
  • 1 lemon
  • 2 spoons sesame seeds
  • Maldon salt
  • Sweet smoked paprika
  1. Put some water to boil
  2. Cut the cabbage leaves in small pieces (2x5cm)
  3. Cook separately the white and purple cabbage pieces for 3 minutes
  4. Drain them and let cool down
  5. Crush the cashews
  6. Toast the sesame seeds and cashews for a couple of minutes in a pan
  7. In a large bowl, mix the cabbage, chopped parsley, lemon zest, toasted sesame seeds and cashews
  8. Season with salt and paprika
