Kale salad with shrimps, honey and orange caramelized chicken and avocado

Kale / Chicken / Honey / Orange / Bell peppers / Avocado / Shrimps / Egg

Ingredients:
4 leaves of kale
300gr chicken breast
2tbs honey
1 orange
4 bell peppers
1 avocado
2 eggs
Olive oil

– Break the kale leaves into pieces and discard the stems
– Wash and let dry
– Squeeze the orange juice and set aside
– Cut the chicken breast into very thin strips
– Cook the chicken for a couple of minutes in a pan with olive oil
– Add to the pan half of the orange juice and the honey
– Cook for around 10 minutes until the juice is completely gone and the honey starts caramelizing
– Remove from the heat and let cool down
– Cut the bell peppers into thin strips
– Stir fry the bell peppers for 5 minutes with some olive oil and salt
– Remove from the heat and let cool down
– Cook the shrimps for few minutes in a pan with olive oil or butter
– Dice the avocado
– When all the ingredients are cold, mix them in a bowl and add olive oil, orange juice and salt
– Poach the eggs and add them to the salad
– Mix throughly and serve
