Whole squid stew

Fresh squid / Potatoes / Tomato paste / Onion / Garlic / Red wine / Vegetable broth

  • Heat some olive oil then add the chopped onion and garlic
  • After few minutes add the tomato paste, chopped potatoes and stir
  • Add the red wine and let it reduce
  • Finally add the whole squids into the pot and let cook at high heat for 1 minute
  • Pour cold vegetable broth until it covers the squids and put the heat to medium
  • Cover and let cook for at least 1 hour (up to 3 hours)
  • Remove the lid and let cook other 15 minutes to let the stew dry out if too liquid
